Special Cupcake Workshop*

March classes are coming soon~. We have Special Cupcake Workshop this weekend!

I normally don’t teach cupcakes because they are one of my shop items^^ but due to many requests I’ll be specially conducting cupcake class in March!

During 3 and a half hour course, you will learn two kinds of cupcakes; Vanilla Swirl & Red Velvet Cupcakes. And you get to bring back 12 cupcakes (6 each)!

For Vanilla Swirl, you will be learning the buttercream icing. We bake cupcakes in ‘sugar batter’ method, and both the cupcake base and the icing are rich in vanilla flavor.

バニラフレーバーはバタークリームのアイシング、レッドベルベットはクリームチーズベースのアイシングになります。 レッドベルベッドは、ホールのケーキでもお作りいただけるレシピをお教え致しますので、ご興味おありの方はぜひともお問い合わせ下さい☆

Another recipe is Red Velvet Cupcakes. 

Red Velvet cupcakes or cakes are now so popular that I decided to teach you this recipe.

This rich and moist cupcakes have many tips and secrets… The cream cheese toppings are so yummy too!

This cupcake can also be turned into a Red Velvet Cake, so for those of you who want to learn Red Velvet Cakes, this class is worth checking out^^!

Dessert Plate for Coffee Break*

I made a dessert plate for my 4pm coffee break yesterday! The menu was Souffle cheesecake, Diamant vanilla and cream puff ^^.

We just finished Japanese Souffle Cheesecake & Diamant Vanille class last weekend. This class is so popular that I’ve been conducting since January. We will have another class again on March 18th (Sun.) 10:30am-2:00pm!

コーヒータイムに、デザートプレートを作ってみました☆

プレートのデザートたちは、先週末レッスンを終えたばかりのス フレチーズケーキディアマンサブレ、そして今週末にレッスンを控えているシュークリームです。 このスフレチーズケーキのレッスンは、1月から開催しているメニューなのですが、とても人気なので毎月クラスを設けております。 日本のスフレチーズ、大 人気です!

This Japanese Cream Puff is one of the menu from Hinamatsuri (Children’s Day) Special Class. I made it in mini size today. Yummy~.

During the class I will be teaching the tips of making cream puff crust together with perfect matching cream. Let’s beat the ****d papa’s cream puff together!

シュークリームは、雛祭りスペシャルレッスンのメニューの一つになります。 基本のシュー生地作りのコツから、美味しいクリームの作り方まで丁寧にご教授致します。 どこのお店にも負けないシュークリーム作りを一緒に致しましょう!

Today’s lesson – Hazelnuts Caramel Banana Tart*

While my memory is still fresh, I want to update today’s baking class – Hazelnuts Caramel Banana Tart & Caramel Chocolat Sable!

先週末のプレミアム・レッスンより、へーゼルナッツ・キャラメルバナナのタルトキャラメルショコラのサブレです。

As my husband and all the students say, this tart is all sorts of awesome ^^! The crust, filling, caramelized banana, and the hazelnuts topping… mmm… I can still smell the sweet caramel around me.

このタルトは、タルト生地、フィリング、そしてトッピングにまでへーゼルナッツの香ばしさを満載に閉じ込めた逸品で、焼き立ては特にため息ものの美味しさなのです☆ 生徒さんたちも、んーと唸りながら食べてくれました^^♪

This class had a lot of caramel making; Caramelizing banana, caramelizing hazelnuts, and the inside of Chocolat Sable was another type of caramel. I love~ caramel. After all, my shop is called Caramel Factory ^^.

The smell was so tempting that one of my students couldn’t resist eating this caramelized banana from the pan. Yes, this can actually be a nice dessert with vanilla ice cream on top!

またこのレッスン では、キャラメル作りがポイントとなっております。 バナナ、へーゼルナッツ、そしてサブメニューのキャラメル・ショコラ・サブレの中もキャラメルなの で、キャラメル好きの方には必見のレッスンとなっております。 特にキャラメル・ショコラ・サブレは、私の大のお気に入りのレシピで、簡単にできてしま うので、皆さんにぜひ伝授したいメニューになります☆

Each of us had a slice with vanilla ice cream. It was so yummy~><. After all my students left, I saw a last slice on a plate and finished them up. oops…

皆で焼きたてタルトにバニラアイスクリームを添えていただきました☆

Students taking a rest in between the class. This is a premier lesson, so lots of work to do! Now you know how tart making takes time. But my class is in a small group with intimate setting so even the beginners get to learn in detail ^^.

Caramel Chocolat Sable – my favorite cookies*

Sometimes I have sweets and coffee for breakfast. It gives me energy!

This is a caramel chocolate sable from premier menu. I have many favorite recipes but this is really my favorite one! Inside the crunchy chocolate cookie, there is sticky bittersweet caramel^^. They are also easy to bake, so I’m thinking of making another batch just for myself, hehe…

I’ll be teaching this together with Hazelnut caramel banana tart. So if you like caramel, this lesson is a must for you!

Premier Class* Hazelnuts Caramel Banana Tart!

Don’t forget that we have another class – Premier Class – this month!

The menu is: Hazelnuts Caramel Banana Tart & Caramel Chocolat Sable

Anyone who has tasted these two recipes will surely fall in love with them^^!

Hazelnuts Caramel Banana Tart is a crispy tart with hazelnuts tart crust, hazelnuts creme, caramelized banana fillings, and caramelized hazelnuts on top. You can enjoy the hazelnuts taste in every single bite you make!

Another menu is Caramel Chocolat Sable. This cookie is one of my favorite recipe! It’s a chocolate cookie sandwiched with caramel. And on top we will add a hint of French Guerande salt, just like we did for Galette Chocolat in Valentine’s Day Special Lesson.

The cookies are easy to make and it’s very tasty. The sticky caramel inside is different from what we’ve learned in Caramel Pound Cake lesson. You really can’t miss this recipe!

Uva Tea* ~ Tea from Sri Lanka ~

I usually serve tea during my classes.

For the last two months I have been serving especially teas from Sri Lanka.

Sri Lnka/Ceylon has many kinds of tea leaves such as Uva, Dimbula, Nuwara Eliya, and others. I like Ceylon tea because it is the easiest to drink and it goes well with sweets and milk too. The photo is Uva tea, one of the most popular tea leaves from Sri Lanka.

When you pour hot water into the tea pot, you want to see these leaves jumping inside the pot – this is called a jumping pot! The more leaves are jumping around, the better the taste comes out from each tea leaves.

And just like Chinese tea, the bigger the tea leaves are the better their quality are! This Uva tea I had had almost perfect shape of big leaves. Hmmm… it tasted so good!

Some of the highlights of the month! We have Hinamatsuri Special, a Children’s Day Special Class. This is a traditional Japanese Children day (Mar.3rd) for girls. Each family with daughters will put out Japanese Hinamatsuri dolls in their house to wish their daughter a healthy and prosperous life. I celebrated my daughter’s Hinamatsuri last year and here is my post. I will be putting small Ohinasama dolls in the shop, too!

                      2) March 15th (Thu.) & 16th (Fri.), 2:30pm-5:30pm – Intermediate Age 8yrs-14yrs

     FEE:      RM180  (RM150 for members) *The fee is for each session, two days.


All the classes are in hands-on workshop style, and the seats/class are limited numbers.
