Dacqoise Caramel Sale – April Basic Class*

It’s a lovely Friday afternoon. You must be counting down for the work hour to be finished… So what itinerary do you have this weekend^^?

Okay, I’d like to talk about some of the classes I have in April! This is Caramel Dacquoise from Basic Class. You’ll be learning this along with Mango Mousse in this class.

So what is Dacquoise?

Dacquoise is a meringue based cake rich in almond. The ingredients are quite similar to macarons, but  this is more towards cake and the texture is lightly crisp on the outside and soft on the inside. Dacquoise is usually served cold, and is an oval shape.

For my lesson we will make them in lovely heart shapes using piping bags, and sandwich them with bittersweet salty caramel buttercream! This butter cream is not a simple type but we will make creme anglaise (anglaise sauce) and combine them together with caramel sauce and butter. So we have lots to learn! Each of you will bring back 12 pieces of these.

So the theme for this lesson is; meringue, piping technique and butter cream.

Another menu is Mango Mousse (6 cups / each)! I learned this *secret recipe* from the Japanese chef who used to work in 5 star hotel in Tokyo. It’s very easy and deicious!

But after all your hard work, combining parts are fun!?

Spring is here***

It’s Spring in Japan!

Spring associates us with words such as fresh, new, bright and cheerful because it’s the beginning of the year for our school and working system. We also have one of the biggest seasonal events of the year ‘ohanami’ (cherry blossom) during this period!I changed my flower lease from blue to this pink one, a color theme for Spring season!


It’s great to have four seasons; Spring, Summer, Autumn and Winter… Each season has its own special events and foods… nature and surroundings completely change and people dress differently… Many things are limited to certain period so we look forward for each season to come thinking of our favorite stuffs during that season. I feel that in such way our memory stays more vivid in our minds because we can connect our daily events with stuffs like – what we wore on that day or how cold and warm the day was or what special food we had, 0r how the fragnant of the flowers and trees were, and so forth. In Malaysia where it’s hot all around the year, I realize that I tend to forget what we have done in which month or what year… ^^;

Anyway, I like the season Spring!

I just finished Hinamatsuri Special Class today (Japanese Cream Puff Class). I finally got to take some photos during the class, so would like to talk about it in my next post!

1. How to become a member?

    Fee: RM50.- *valid for 2 years

OR if you sign up for 2 classes, you will get FREE membership card! I will pass it to you on your 2nd visit.

2. Member Privilege

a. Member will get 25% discount for all the regular classes.

  Basic Class:             RM180 —>  RM135 (save RM45.-)

  Premier Class:      RM195 —>  RM146 (save RM49.-)

  Season Special:    RM220 —> RM165 (Save RM55.-)

b. If you sign up for 6 classes you will get 50% OFF for the next (7th) class.

March 14 was my birthday…

March 14th was my birthday! Oh yes, I turned to ** yrs old. Thank you for all the birthday wishes!

Unfortunately my daughter has been sick for the last couple of days and I’ve been rather busy taking care of her and the shop with no rest… I hope my baby daughter gets well soon… But on my birthday night I could spend some time with my daughter, my husband and his parents. You know what, my mother-in-law shares the same birthday so we always celebrate our birthdays together!

We didn’t have any special cakes or presents, but it’s ok. Spending time with family is wonderful enough. The cake photo is something I baked a while ago, wish I had this yesterday. haha.

By the way, my camera got lost 2 weeks ago in the shop so I haven’t been able to take any photos… I had a lot of my daughter’s photos in there… so sad… I must be careful next time.
