April classes are finished!

We just finished all our classes in April! I’d like to thank you all for joining our classes again this month!

The last lesson was Afternoon Tea Special Class. This is a very interesting class which you can learn 5 kinds of sweets and sandwich in one session!

For this lesson, I focused on quick & easy & delicious sweets so that you can for sure bake them at home for your family and friends! So even though we made more items than the regular classes, I felt that we used less tools and dish! You know, washing tools and plates are another work when baking…;

I hope that students enjoyed the class and were excited to practice at home after the class^^!


And yes, I opened the Ceylon Silver Tips tea I was talking about the other day. The tea leaves were beautifully shining in silver color, and the color, fregnant and the taste was excellent! I forgot to take the photos but would definitely like to write about it the next time I have them.

Order made sweets~!

These are some of the order made sweets I baked this week! Colorful macarons & Cupcakes!


Yes, we also take orders for macarons, cupcakes and cheesecakes (Japanese Souffle Cheesecake, N.Y. Cheesecake and other cheesecakes). The colors for macarons are usually fixed, but if you would like to request specially we can discuss too^^.

Intermediate Children Baking in May!

We are closed from April 29th(Sun.) to May 11th(Fri.)!

Please be noted that we will be closed from April 29th (Sun.) to May 11th (Fri.) since we are going back to Japan for holiday. In Japan we have the longest holiday called ‘Golden Week’ around this time, and I’ll be back for a short while to see my family and friends. I haven’t been back to Japan for 2 years! (my last visit was also Golden Week in 2010), and of course for my daughter Hanae this will be her first visit, so I am so excited about it!

We are so sorry for any inconvenience that may cause, but I will keep on updating my blog from Japan and hopefully will be writing some interesting posts from there, so please check us out while we are away!

Oh, I will also be checking my emails from Japan, so for any class registration please email me anytime!!!

April Premier Class*

This is another class we had last weekend – Caramel Chocolate Mousse & Hazelnuts Finacier from April Premier!

Mousse ready to be in the freezer!

Well, I forgot to take the end products because it took a while to freeze ><. This mousse has a lot of parts to make, but actually the individual parts are very simple to make and you can also eat each of them separately.

When you freeze it, it tastes like ice cream too^^!

Another menu for this class was Hazelnuts Finacier. This cake is very easy to make and of course delicious! I normally teach two kinds of items in a class, and the second menu is a simple one so that anyone can immediately do at home^^.

April Intermediate Children Class!

Last weekend we also had Intermediate Children Baking Class! We have classes every month for children age 8yrs to 14yrs, since there are many children this age group keen in learning baking^^!

This month menu was Carrot Cake with Cream Cheese Frosting!

They used hand-mixer, piping bag and Kitchen Aid mixer too!

Good job children!

Intermediate children baking for May is scheduled on May 20th (Sun.) 10:30am-1:30pm. Menu is Vnilla & Chocolate Marble Cake! I’ll be writing a post shortly.

English Tea!

I have big collection of teas in my shop and at home. Some of them I buy myself, but most of them are gifts from my family and friends. I like to taste the difference of each tea leaves and the brands, and match them together with the sweets of the day^^!

So I was selecting the teas for the Afternoon Tea Lesson and found this perfect one! It’s a Ceylon Silver Tips White Tea by the brand Dilmah. I remember my mother bought me back this tea leaves from Sri Lanka. I introduce many Sri Lanka tea leaves during my classes, but this one is ‘Silver Tips‘ (limited tea leaves that shine like silver color).

Another tea I want to introduce you is Afternoon tea from Fortnum & Mason. Fortnum & Mason is one of the most popular tea brands in the world, so if you like teas you must know their name! There are hundreds of choice, and this one is a lighter tea with blend —.

Usually when you are having afternoon tea, you want to mix up lighter tea and stronger tea together. And for stronger tea you can later pour in milk and enjoy milk tea. That’s why I made this two choice! I haven’t opened neither of them, so I myself am really looking forward to see how the tea leaves are… I will be doing opening ceremony on the 28th April class, haha, so if you’re interested to join that moment, please let me know!

Bread Baking Session 2 ~Bagel*Bagel~!

Afternoon class was Session 2 ~Bagel*Bagel~ class! We had 2 students this day that joined both morning and afternoon sessions. Thank you so much for your hardwork ^^!

We made chocolate chip & walnuts bagels and honey & cranberry bagels. Since it’s more difficult to make bagels with lots of filling, we will practice a plain bagel first using the honey bagel dough.


Bagels are actually less work than the table roll, and we don’t have the smashing and throwing process. The proofing time is also less so if you are having a busy morning this menu will be good to start with!

First Bread Baking Session! ~Table Rolls~

Last weekend we had the first bread making sessions!

Session 1 in the morning, we made sausage roll and ham & cheese roll with basic table roll! We of course used our ‘hands’ (and not the machine, haha) since I want to teach students how to make a soft bun using hands!

We had to press, smash and throw the dough a few hundred times, and then only get to do this rolling process…^^

At home, of course you can use machine to shorten all this tedious and tiring process! But I think children would love to help you doing all this, and it’s always good to learn both ways!

Tala~! So these are the breads we baked.

Each of you get to bring back this much! 8 rolls + extra. We will also practice this simple roll bread without anything inside.

Afternoon Tea Lesson*

Every once in a while I conduct Season Special Class! These are the special classes that you get to enjoy Japanese four seasons and other cultural events! In February we had Valentine Day’s Special and in March we had Hinamatsuri Japanese Children Day Special!

And for the month of April and May, it will be Afternoon Tea Special Lesson!

Here are the 6 items you will learn during this 5 hour course!

1. Scone

2. Sable Cookie

3. N.Y. Style Cheesecake

4. Gateau Chocolat (Chocolate Cake)

5. Panna Cotta (Blanc Manger)

6. Sandwich (Tuna & cucumber)

This time I focused on quick & practical menu, so that you can swiftly prepare them whenever you have guests coming to your house!

The photos are the image of this lesson, and we will be baking all the 6 items together. You get to bring back all the recipes and 2 persons portion of the afternoon tea sets!

During the tasting session at the end of the class, I’ll prepare Caramel Factory’s two popular flavor macarons and two types of teas.
