Christmas Cakes*

Thanks to all my students, I could make so many Christmas cakes and cookies this year! I remember last year I was very busy with opening Caramel Factory that I didn’t even get to bake a single Christmas cake! Besides, after moving from Japan to a tropical country, I couldn’t get used to a warm Christmas and always missed celebrating the day with cakes and presents.

Going back to my hometown also helped me enjoy Christmas season this year. I had so many seasonal cakes in Japan, and also bought back many kinds of ‘stollen’, a German Christmas cakes. I got to share them with some of my students^^.

Merry Christmas to you all!

Hope you had a wonderful Christmas holiday with your family and friends^^. I also spent precious time with my family and friends. I’d been quite busy for the last couple of weeks, so I was so happy to see my daughter Hanae having so much fun with us! She also became 2 years old on the day, so I made her a Christmas cake and let her have a bite! She said, “Hmmm… it’s nice~!”

She saw me pouring tea and started playing with the tea… she is a girl, after all.

When your birthday falls on the same date as those holidays, your presents or birthday cakes tend to become 2-in-1, and I feel that’s a bit pity… So I am planning to make her a Birthday Cake this weekend!

January 2013 Class Schedule*

2012 is coming to an end in a few weeks!

In Japan, the  January 1st new year is quite an important date for us, as it’s our biggest celebration of the year.  We have X’mas and New Year holiday, and people get off work for about 1-2 weeks after Christmas. The first 3 days of January will be a time for us to eat traditional osechi ryouri and visit relatives and have greetings. We also visit the shrine on January 1st and purchase our goshinya and ema (amulet with animal of the year) to put up in the house. Just like Chinese New Year, we have animals representing each year and next year will be a ‘Snake’!

Around this time is winter in Japan and it’s cold! After spending so much time in Malaysia’s weather, it was quite a shock to experience the winter season again in Japan, but it was fun! I had an opportunity to do many things and enjoy the different offerings during this trip. I do miss living in a four season country where each season offers new and different foods and items and of course weather.

And so with my wish to all of you for Merry Christmas and Happy New Year, I would like to post our January 2013 schedule!

Entremet Cafe Chocolat*

Hi everyone, I’d like to introduce you another basic class for this month!

Entremet Cafe Chocolat is a Chocolate mousse layer cake. It is made from chocolate biscuit, chocolate mousse, coffee jelly and some bananas. It is a sumptuous cold dessert that goes well on a hot summer day in Tokyo. Since it’s hot every day in Malaysia, this cake is suitable to be eaten all year round^^!

We will make this cake in 7″ mold and decorate it with cream and macarons. The photo has cacao nib around, but during the lesson we will decorate this cake with colorful macarons which I prepare prior to the class.

Another menu for this class will be Banana bread. This cake is in-between bread and cake and the texture is very unique. It’s very easy to make and can be your breakfast & snack!

Macaron class ~X’mas style~!

Macaron class is starting this week!

This month we will make 2 fruity flavors – passion fruits chooclat & raspberry macarons. Each of you will bring back 6pcs per flavor and pack them in a box like the photo.

Macaron is slightly tricky to make, but I will be showing you the tips step by step! For the passion fruits macarons, the filling will be chocolate ganache base and for the raspberry macaron, the filling is butter cream and raspberry confiture (jam).

Strawberry Short Cake * December Basic class

It’s December! Christmas is coming soon, and I’m happy to announce some new exciting classes during this festive season.

This month we will be making lots of Christmas cakes! First, this is a traditional Japanese Strawberry Short Cake. It’s one of my favorite cakes to eat during the winter season in Japan. During my trip to Japan last week, I had the chance to try a few strawberry cakes in some of the best patisseries in Tokyo, so I hope to bring this delightful recipe and introduce it to all my students here! You will learn how to bake sponge cake and the tips to decorate it nicely using turning table. I am excited about this class because this simple and delicious cake is rather difficult to find in Malaysia. I miss having them!

Each of you will bake this cake in 15cm size whole (and you also get to bring back 1 extra sponge cake). For this class, I brought back cute Santa Claus all the way from Japan, so let’s decorate your cake nicely and practice for the coming Christmas!
