Hi! I would like to give an update on Caramel Factory’s  membership card for 2013.

 

First of all,

1) How to become a member? *Validity: 2 years

    Fee: RM50.00.-

    Or Sign up for 2 classes and get FREE membership! 

 

2) Member Privilege

a. Member gets up to 25% off discount for all the classes.

  Basic Class:             RM180 —>  RM139 (save RM41.-)

  Premier Class:      RM195 —>  RM149 (save RM46.-)

  Season Special:    RM220 —> RM169 (Save RM51.-)

b. After every 6 classes, member gets 50% OFF for the next class from the original price. (ex: Basic class becomes RM90.00.-)

c. After finishing 1 card, member gets 50% OFF for the next class from the original price. (ex: Season special becomes RM110.00.-)

Hi there! Thanks for waiting for the February 2013 class schedule! Here it is! 

This month we will focus on classes specially requested by you all. Don’t miss this chance to catch up on classes you’ve missed in the past. Thanks!

1. Special Chocolate Cookie Class! ~ Galette Chocolat & Caramel Chocolat Sable ~

Still not too late for Valentine and Chinese New Year!

These two chocolate cookies are one of the best ever cookies I’ve baked and tasted! I conducted this class in last year’s Valentine Special and other classes so was not going to repeat this year, but due to my students’ strong request, I’ll be conducting the class combining two delicious cookies into one!

Galette Chocolat is a chocolate cookie with French guerande salt on top. We will use a dark chocolate for this cookie. And for Caramel Chocolate Sable, we will bake a chocolat cookie and sandwich them with delicious salty caramel! For details on both classes, you can refer to my previous posts: 2011 Valentine Special Lesson! & Caramel Chocolat Sable!

2. Japanese Cream Puff (18pcs) & Vanilla Viennois Cookie (10pcs)

This Japanese cream puff, similar to “Beard Papa” but smaller in size, are one of Caramel Factory Specialities! We will bake a cream puffs with crispy cookies on top and fill them with light and milky Japanese style custard cream. Vanilla Viennois is a vanilla cookie with very light texture.

 

3. Japanese Souffle Cheesecake (7″ whole) & Diamant Vanille (10pcs)

Japanese Souffle Cheesecake, known as cotton cheesecake, is our house speciality! We will bake this moist and soft cheesecake in a unique method. Diamant Vanilla is French style vanilla butter cookie. It’s easy to make and is nice!

3. Salty Caramel Dacquoise & Mango Mousse (6 cups) – Premier Class

Dacquoise is a meringue base petit cake! You hardly see this cake in Malaysia, but I’ve been receiving great feedbacks from the students who have leaned this cake. We will bake the cake and sandwich them with salty caramel butter cream. This delicious Mango Mousse is a recipe from 5-star hotel in Tokyo!

 

4. Caramel Factory Hokkaido Chiffon (7″ whole) & Miroir Cookie (almond cookie sandwiched with hazelnuts praline)

Valentine Special Class!

Valentine’s Day is coming soon! As I wrote in my earlier post, in Japan, this is a special day when ladies buy chocolates for men! It’s an exciting day for both boys and girls to choose the chocolate to give to someone you care for, and also to receive chocolate from someone you are fond of. The department stores and shops will be filled with various chocolate related items!

For me I have been baking chocolate cakes or cookies for my husband. It’s more personal and more tasty!?

So for this year Valentine’s Special Class, I will be teaching you 3 kinds of exciting cakes; Gateau Chocolat Framboise, Framboise Finacier and Chocolate Nuts Cookies!

今年のバレンタインレッスンは、ガトー・ショコラ・フランボワーズ、フランボワーズのフィナンシェ、そしてアーモンドの香ばしいショコラクッキーの3品になります!

I have various gateau chocolat recipes, and for this class I’ll be teaching a rather light yet moist and delicious chocolate cake! This gateau chocolat can be both eaten warm and cold, but it actually tastes better the next day when the cake is settled well. You can serve it with simple icing, whipped cream or an ice cream! We will put lots of raspberry inside! Each of you will bake this in 6″ (15cm) mold.

 

ガトー・ショコラのレシピはいくつかあったのですが、軽やかなものか濃厚なものか迷った末、軽めで食べやすいものをお教えすることに致しました。

中にはフランボワーズをたっぷりと入れて☆

Another recipe is Framboise Finacier, a raspberry butter cake! We will make the raspberry jam as well, and will bake the in lovely heart and flower shape.

もう一つ、フランボワーズを使ったレシピ、フィナンシェをご紹介いたします。簡単で美味しいフィナンシェにちょっぴり一手間加えて、フランボワーズのコンフィチュールとピスタチオ、皮付きアーモンドを飾ってバレンタイン仕様に可愛らしく仕上げます。

And the third Chocolate Nuts Cookie, is a chocolate cookie with almond slices! I focused on “easy-to-bake” items for this Valentine Special class, so all the three items can be prepared quick and nothing complicated, I believe. And most importantly they taste nice^^! Let’s bake something nice for your loved one on Valentine’s Day!

最後に、欠かせないのがクッキー。サクサクアーモンドの香ばしいクッキーです。今年のバレンタインはぜひ、手作りスウィーツで心の篭った贈り物を作ってみませんか。

Caramel Factory Chiffon Cake & Miroir Cookie * January Basic Class!

January Basic Menu is Caramel Factory Hokkaido Chiffon Cake & Miroir Cookie!

Caramel Factory Hokkaido Chiffon Cake is a super moist earl grey tea chiffon cake with a hint of Japanese cream. Chiffon cake is quite common in Malaysia, but I believe the texture of this chiffon is slightly different from the Malaysian type, and is more fine and moist. We will bake this in 17cm chiffon cake mold, and once its cooled down (this process is quite important in making this cake!!!), will decorate with cream.

お紅茶はもちろんアールグレイを使用し、しっとりと極上のシフォンケーキに仕上げます。コーティングには、日本から持って帰ってきた黒糖ベーストを隠し味に入れたシャンティを飾って。

If you don’t have a special chiffon cake mold, you can bake this in a paper cup too, just like Hokkaido cake!

Miroirs is a very unique French style cookie. Because its meringue based cookie and does not contain any flour, the texture is very light and easy to eat! We will coat them with almond chunks and sandwich gianduja chocolat, a hazelnuts praline taste of chocolate. It’s easy to make so you can bake a lot for this coming Chinese New Year!

ミロワールクッキーは、メレンゲベースの軽やかな食感が特徴のクッキーです。アーモンドをたっぷりとふりかけ、中にヘーゼルナッツの香ばしいジャンドゥージャのショコラをサンドします。 もうすぐ旧正月。 クッキーだけでもとても美味しい、贈り物にもお勧めの一品です!

Apricot Tart & Snowball Cookie * January Premier Class !

February premier class is Apricot tart & Snowball Cookie!

This Apricot tart has slight hint of hazelnuts taste both in the crust (pate a sucre) and almond creme (creme d’amande). We will use hazelnuts praline in the crust, and hazelnuts powder in the almond creme. The sour apricot halves gives a great match to this cream and crunchy tart! This tart can be kept in a room temperature and will remain crunchy for 3~4 days. We will bake the tart in 7″ (18cm) whole size.

今月の応用クラスに、大好きなタルト杏のタルトをご紹介いたします☆ パート・シュクレとクレームダマンドにヘーゼルナッツの隠し味の入ったタルトです。空焼きしたパートシュクレに、クレームダマンドとアプリコットをかざり、長時間じっくりと焼き上げるので、サクサク食感が香ばしいタルトです。 2~3日経ってもサクサク感を楽しめます。

Another menu is this Japanese Style Snowball Cookie! It’s one of the most common cookies made in Japan. This is a vanilla flavor cookie and is less sweet, so the icing sugar coated around makes the cookie just nice! It’s crunchy yet melting texture^^. This cookie is also easy to make so can be made for the coming Chinese New Year!!!

もう一品は、スノーボールクッキー。軽やかなクッキーで甘さ控えめなので、雪のように周りにまぶした粉糖がほどよい甘さと口溶け感をプラスしてくれます。 旧正月にもたくさん作れるお勧めのクッキーです☆
