Hope the haze will be gone soon…

The haze is getting worse day by day… I’ve lived in Malaysia for 7 years but this has been the worst so far for me. Last night I rushed to the pharmacy to finally get the mask because I felt my lungs were being pressed with smoke. Some shops were out of stock and I think people start to realize the serious situation in Shah Alam as well (although I saw a man still jogging^^;!). I feel it’s smokey even inside the house, and don’t know where to go or what to do.

Last weekend was really bad and I wondered if students could make it to the classes, but thank god the kitchen was alright and I could enjoy baking with you all and forget about the haze for a short while. The photo is mini macarons I prepared for Opera Maccha. Hope you enjoyed the cake with your family & friends! Thanks again to all my students for joining my classes in this condition (some all the way from Singapore or Melaka!).

By the way, I received some request of Caramel Dacquoise class on weekend, so will be adding another class at the end of July. Please check out the schedule and let me know if you are interested to join!

Macarons*

We made many many macarons in the last two weeks due to big orders for wedding events! Photo is for someone else who fell in love with our macarons and came to pick up yesterday^^. Yes, we take orders for macarons (5-7 days in advance)! Our 3 best selling flavors are chocolate, vanilla and caramel.

Meanwhile, if you wish to make on your own, you have a chance to learn the exact same recipe in the coming classes – for chocolate and vanilla macarons! We have 2 classes this month: on June 14th (Friday) 11:00am-2:30pm & June 29th (Saturday) 11:00am-2:30pm.

Macarons are quite difficult to make and even after you learn, please be prepared to fail a few times at home^^;. But don’t worry, I’ve been receiving pleasant comments from my students that they successfully made them at home. You can tell that these are the patient and hardworking students! hehe… Wishing everyone’s success in future!

Anglaise sauce & Glacage chocolat*

Our cakes for June Premier class are both cold entremet dessert, and we will be practicing layer cakes!

There are two key words in making those cakes ; anglaise sauce and glacage au chocolat.

Anglaise sauce is something like a custard cream (but more liquid form) which is often used in a mousse cake. The temperature of anglaise sauce is controlled in between 82 -85 degree C, and it is quite difficult to get the right texture. I will be teaching you how to check the right texture without using thermometer.

Glacage chocolat is important in finishing up the cake nicely! Yet it is also quite difficult to coat them beautifully on top of top the cakes (I will prepare the glacage chocolat and you will be practicing the coating part). Hope all your cakes turn out beautiful and shiny!

Macaron Special Class* Dates added!

Hi there! One of our Caramel Factory’s specialty Macaron Special Class will be conducted this month!

I will be teaching 2 flavors – classic Belgium Chocolate Macaron and Vanilla Macaron. We will bake 2 kinds of crusts together with inside ganache. Each of you get to bring back 12pcs (6pcs per kind) or more!

Since this class was popular, I added another class in June. Thus both dates are still available. Here are the schedules.

Summer Orange Pound Cake*

This is Summer Orange Pound Cake from June Basic Class! I’ve taught this recipe before and it was quite well received from the students, so decided to repeat again^^.  It’s a very moist pound cake and is more like a soft sponge cake with lots of orange syrup. yummy~.

Another menu is Mascarpone puff. It’s a very simple meringue base cake (puff) with mascarpone cream inside.
