Raya Special Macaron Class*

Hi there! Ramadan month is starting. It’s been hot lately… I hope you take good care of yourself and have a good month ahead!

By the way, I will be conducting Raya Special Macaron Class in June. This is Caramel Factory’s signature macarons, using Italian meringue method. We will be making 4 kinds of popular flavours in the class; Japanese Green Tea, Raspberry, Chooclate and Vanilla macarons.

The class will be held hands-on and I will be teaching how to make macarons in details. Macaron making can be quite tricky but if you practice a few times, I guarantee you can make nice macarons successfully even at home!

You can bring these macarons to your seasonal gatherings!

Today I am posting June Class Schedule. Prior to Hari Raya at the end of June, I am holding a couple of Raya Special classes! For special macaron class, I will be teaching four of my favourite flavours. Please take this opportunity to learn caramel factory’s signature macarons^^.

Lemon cakes & happy Mother’s Day!

We are in the midst of baking lemon cakes. This is Tart au Citron, a refreshing lemon tart with tart crust, creme d’amande (almond cream), lemon cream and italian meringue on top. I prepared many lemons for this class and also for the Weekend au Citron class for this coming weekend!

Weekend Citron & Lemon Biscotti

May Basic class is Weekend Citron and Lemon Biscotti. As per its name, weekend citron is a lemon buttercake originally baked on weekends to share with family members and friends. I designed this class so that you can bake and enjoy the cake with your family during Mother’s Day ^^.

Sour cream is often used to make the buttercake moist and soft. We will be using something else, a simpler ingredient, to replace it for the cake ^^! And coat the top with lemon glacage.

Another recipe for this class is Lemon and pistachio Biscotti. It’s a very refreshing taste of biscotti.

Hi!

Today I am posting May 2017 class schedule ^^. 

Our theme for May is fresh lemon! I will be introducing “Week-end Citron Cake“, a French style lemon butter cake as our new recipe. Week-end Citron originates from people baking this cake on weekends to share with their family members and loved ones. Since May 14th is Mother’s Day, I think it is a great way to celebrate this day^^.

I will also be teaching Tart au Citron and other cakes from April classes. Ramadan month is starting from end of May. Let’s enjoy baking next month again!

Many coffees are used in this class and will keep you awake! The tasting session is with the hand-dripped coffee, and I am asking the Coffee & Macaron class graduates to pour us a nice cup of coffee^^*.

Double Chocolate Cream Rollcake Class*

Our new menu for the April class is Double Chocolate Cream Rollcake! We will use Demarle Flexipan rollake mold to bake this cake.

I tried two kinds of thickness and below photo is the thicker kind, about 2cm thickness.

Each cake has different look and taste; The thinner version can feel more cream, thus the whole cake melts in your mouth, and the thicker version can enjoy the cake texture. In the class we will bake the cake with in-between thickness, (to get both good parts^^), and wrap two kinds of chocolate cream with whipping cream.

Another recipe for this class is Mini Caramel Nuts Cake. It’s a moist caramel muffin topped with almond and pumpkin seeds. Please look forward to this recipe!

Sorry for my late update on April class schedule! Celebrating the arrival on our Flexipan rollcake mold from France (^^), I will be conducting a special rollcake class in April! The recipe is originally from “Koyama roll”, one of the most popular rollcakes in Japan. I will be modifying it into Caramel Factory style! I will also be repeating requested classes from previous months. Thank you!
