Apple Pie*

The other day I made pie (pate feulletee) from the scratch and bakedĀ Chausonnes aux pommes (apple pie)!

In Japan we usually make pie during cool autumn to winter season, or in an air-conditioned room; otherwise the butter will melt and you cannot make pie. Just like tarte, pie is also a sensitive and much more difficult pastry to make.

There is another easier and faster way to make pie which is called Feuilletage rapide. Since this method cuts out part of the complicated process, you won’t feel the layers of pie as much as the other one (pate feulletee), but it still tastes good!

I filled them up with baked apples.

Nothing tastes better than the just baked pies!!!

Apple Tarte

Tarte is my most favorite kind of cake. Whenever I go to cafes and have choice of cakes, I always feel like going with tarte especially those with caramel or chocolate. Some people may try out different types of cakes in each visit, but I find myself having the same kind over and over… haha.

This is an Apple Tarte I baked the other day. It’s a very simple tarte with creme d’amande (almond creme) and fresh apple on top. I like to caramelize the fruits inside-like apple and banana, but this time I used the fresh one. Instead I added some pieces of butter and caster sugar on top to make the tarte juicer and tastier (sugar will melt and become caramel).

These simple and basic baked cake gives me somewhat a relieved feeling whenever I bite into it. Perhaps it reminds me of my mothers’ home made cake…

Apple Caramel Pound Cake

This is an Apple Caramel Pound Cake I made.

As you can see from my blog title, I like caramel sweets! Caramel pound cake, caramel cheese cake, caramel cookie, tarte with caramel inside… many sweets go well with caramel. For pound cake, I like to match it with apple and banana especially.

I caramelized the apple on a frying pan first and put inside the pound cake. Then make caramel sauce separately and put them also and stir it to a marble pattern.

Sometimes I caramelize the apple until it becomes soft but this time to retain its crunchiness I just fried for about a minute and took them out. It’s all up to you how you want to enjoy the fruits. You can also control the bitterness and amount of caramel, and this makes the home made baking great!
