August 2016 Class Schedule*

Hi there! I hope everyone has had a good Raya holidays. After a relaxing week, it’s back to work at the kitchen testing out some new recipes and refining old ones:) Today I would like to post our August 2016 class schedule.

It’s in the midst of summer in Japan ^^, so I am introducing a cooling desert called Valencia, which is one of the specialty of the renowned patisserie Sadaharu Aoki!

<Coffee & Macaron Master Course>

Coffee & Macaron Course is an intensive 2-day course designed for students that are interested in mastering  the art of making macarons and coffee brewing (focusing on hand-dripping). For more details of this course kindly refer to my blog post; Coffee Making and Macaron Master Course!



As for the date and fee;

DAY 1:   July 31st (Sunday) 10:30am-5:00pm

DAY 2:  August 7th (Sunday) 10:30am-5:00pm

FEE:      Promotion RM990 (original price RM1,290) – 3 more seats left!

*It’s a full day course with 30 minutes lunch break. We will make various types of macarons (more than 12 kinds) over these 2 days. Each session will start with macaron making and you will learn about coffee in the 2nd half of the day tasting delicious macarons and coffee. It’s a fun class and I am looking forward to having good time with you!

Bread Baking Session 2 ~Bagel*Bagel~!

Afternoon class was Session 2 ~Bagel*Bagel~ class! We had 2 students this day that joined both morning and afternoon sessions. Thank you so much for your hardwork ^^!

We made chocolate chip & walnuts bagels and honey & cranberry bagels. Since it’s more difficult to make bagels with lots of filling, we will practice a plain bagel first using the honey bagel dough.


Bagels are actually less work than the table roll, and we don’t have the smashing and throwing process. The proofing time is also less so if you are having a busy morning this menu will be good to start with!

My class is small group of students and intimate setting!

Children Baking Class started today!

Caramel Factory is BUKA ‘opened’ from today! This week will be a soft launch, and the official opening will be in Janury 2012!

The night before…

I was busy preparing the shop until the last minute, so last night my parents-in-law dropped by to help me clean-up and decorate the shop at about 11pm. This week is a Children Baking Program week (4 days course), so the shop is in kids color. Thanks mom!

Here is our kitchen!

The first day today’s menu was colorful doughnuts. Children loooved playing with the doughs. yep, it’s very soft and nice! The best part for them seemed to be throwing the dough into the air… well, smashing them onto the working table! Each of them were taking turns to smash it onto the table, and wooowing at each other, haha (just so you know, this dough was not being used to bake). Children do know how to enjoy themselves.

Espresso Machine!

Last week I bought an espresso machine! I’ve always wanted one in my house and finally the time came! My husband found this Delongi model ECO310R with reasonable price online so I decided to go for it without giving much comparisons with other models. This color and the size looked perfect for me too!

On the very day the machine came, I made espresso for breakfast!

Even though it’s a small sized machine for domestic usage, I was excited to see espresso crema, a small foam on the surface of the cup. Having crema is one of the important elements in making good espresso because this means that you could ‘tamper’ the coffee beans properly.

Another way to tell whether the coffee is properly tampered is by measuring the time the water takes to run through the machine. The water should come out in about 25 seconds. If not, the coffee will taste either thick (more than 25 seconds means coffee beans were tampered too hard) or diluted (less than 25 seconds means coffee beans were too loose). However, in case of this machine I had to manually stop the water so I could not really tell whether the ‘tamper’ process was ok or not.

We enjoyed the first cup of espresso with home made bagels!

I’m excited to get used to this machine and make good espresso and espresso based drinks…

Drole cafe in Tokyo

It’s Friday night again… My Friday nights have been rather quiet since Hanae was born, but I guess that’s okay too. Spending time with your family. Oh today was my husband’s birthday. I normally bake something for him and get him some gift, but this year I didn’t have time to do anything; Well, I asked him whether he wanted a birthday cake and he said ‘no’. haha. He seems to have caught a cold and was not feeling well. So instead I cooked him a healthy japanese dinner!

Anyway, today I’d like to show you one of my favorite Japanese cafes in Tokyo. This cafe is called Drole and is located in Nakameguro, a trendy area near Shibuya. (They have branch in Shibuya and Daikanyama, too.)

In Japan, these kinds of cafes are quite common but this drole was especially cozy and I liked it very much! It’s good to chit chat with your friends, sometimes spend time on your own, or you can even bring your baby. It’s quite spacious inside so you can bring your stroller. And in front of this cafe is a very nice river, Nakameguro River, so many couples take a walk with their babies.

I like their wooden furniture and how they display things.

They serve light meals, drinks and cakes.

One day I went their on my own to have some lunch.

Back to NYC!

The following year we went back to New York City again (previous post of NYC trip). This time we didn’t particularly focus on the cupcake shops, but went around the city and explored American pastries during our 2 weeks of stay. The first photo is from Babycakes.

The other thing I love to eat in the U.S. is Bagels! The texture is somewhat different from any other bagels outside of the U.S. It’s very bouncy and soft, and eating it with cream cheese is excellent too!

This bagel shop – Pick A Bagel – is one of my favorite bagel shops in the city. It was close from my parents place that we went there many times to grab something for breakfast. One morning we decided to take them back home.

I loved their muffins, too!!! Yummy~.

The other day I made many kinds of Bagels. It took me a while to bake all of these because I could only bake one kind at a time… but this is like a shop^^!

My husband’s favorite was Banana Walnut Bagel, and mine was Cinnamon Raisin & Coffee Chocolate Bagels. I like breads with chocolate!

Which one would you like to have?

I keep the bagels in the freezer and toast them in the morning. This way they last longer. It’s fun to choose which one to have each morning! Sometimes Icut them into small pieces so that I can try many different kinds!

End of last month I traveled to Singapore for couple of days following my husband’s business trip. It was Hanae’s first time traveling on the plane! She was still to be 4 months old and I was a bit worried she might cry on the plane, but the plane ride was very short (40 min.) and was rather comfortable, thank god.

It was almost 1 year since I traveled overseas so I got very excited and was walking around the town, mostly to the closest shopping mall from the hotel we stayed, Raffles City Shopping Center. I had great time checking out the pastry shops and also meeting some of our friends there.

After I came back from Singapore I fell sick for a while… it always happens after I travel somewhere no matter where I go and how long the trip is. I guess I always get too excited and push my body hard during the trip;

So after a long rest, I finally baked doughnuts! for our friend’s who came to see us. I baked two kinds of flavor, chocolate and kinako. Kinako is a japanese style flavor made from grounded yellow bean. We normally put it on mochi or doughnuts.

This is one of my favorite kind of doughnuts!
