Choux de Noel & Tea Snowball Cookie*

Our 2016 Christmas Lesson #1. is Choux de Noel, a Japanese style cookie cream puff in wreath shape filled with earl grey tea creme patissiere (custard cream) and pistachio chantilly. We will decorate it with some strawberries and blueberries.

The key for this class is to make cream puff grow nicely, and you will be learning some tips to make it successful. Hope everyone’s choux becomes nice shape^^!

The crunchy cookie on top has a hint of cinnamon so that the combination of tea x cinnamon spice will remind you of hot chai and Christmas spice cookies and cakes.

Another recipe for this class is Tea snowball cookie. It’s an earl grey flavored cookies coated with icing sugar, and if you like you can also add some cinnamon spice to its decoration.

Today I would like to post December 2016 class schedule. Thanks for waiting!

Christmas season is coming and I am excited to introduce some Christmas style cakes and cookies to you! “Pistachio x Red berries” is my theme for this year’s Christmas. We will make this combination into Choux wreath and Entremet layer cake. I will also be repeating some popular classes from the past such as Strawberry Short Cake and Raspberry Cheesecake. Of course, gingerbread cookie too. I myself cannot go through Christmas without baking those items!

Earl Grey Tea Cheesecake Class*

Hi there!

We are starting April class from this weekend^^! I am excited to see you all again and also to meet new students.

This is Earl grey tea cheesecake we are baking for Basic class. It’s rather a soft and light cake, and not so creamy like my Japanese souffle cheesecake. You can see there are lots of earl grey tea in it! The bottom is oreo crust. We bake it in 7″ whole size.

Another menu for this class will be Egg tart (Flan nature)! 

I know many Malaysia likes to eat egg tart ^^. So do I! This is a Japanese recipe, so might be slightly different from what you normally eat but it’s still delicious! You can both have it warm and cold.

The bottom crust is called pate brisee, which is a non-sweet type of quick pie crust. You can use this to make kiche as well, so it’s good recipe to learn! Each of you get to bring back 5pcs of 10cm size.

Earl Grey Tea Cheesecake & Oreo Muffins! – March Basic Menu

Have you ever tasted cheesecake in tea flavor?

This is Earl Grey Tea Cheesecake from March Basic class! It’s quite a unique cheesecake with Oreo crust at the bottom. This cheesecake is soft and fluffy, but it’s different from any other cheesecakes I’ve taught in the past such as Souffle Cheesecake and Gateau Fromague!

Another menu will be Oreo Muffins. We will be using lots of oreo for this lesson^^.

January Class is Finished!

Yesterday was the last class for the month of January!

I had Japanese Souffle Cheesecake class in the morning and Caramel Pound Cake class in the afternoon. This photo is with my students in the afternoon class. I had the first “man” (not a boy) in my class^^!

He made a scone with elephant shape. What a surprise!

Everyone’s caramel pound cake looks so good!

Caramel Pound Cake class is over for now (although I intend to have other types of caramel pound cake class in the future since it tastes sooo delicious), but we have repeat class for Japanese Souffle Cheesecake (Basic A) and Gateau Fromague (Advanced) in February.

So for those of you who missed the January class, please check it out! Gateau Fromague class is on this weekend 5th Feb (Sun.)!
