Tart au Tiramisu*

Selamat Hari Raya!

How was your Hari Raya holiday? I hope you all enjoyed the long weekend^^. As for me, I stayed around the town and played with my kids, went to some cafes and also did some baking. It was relaxing and refreshing holiday for me ^^*.

This is Tart au Tiramisu I’m teaching in July class.

It consists of; Pate a sucre chocolat (chocolate tart), chocolat ganache with a hint of orange flavour, biscuit chocolat (chocolate sponge cake), and tiramisu mousse on top. It is a delicious tart especially for chocolate lovers…




We will bake Orange chocolat finacier together in the class. Chocolate and orange is a good match!

Hi there!

Today I am posting July 2016 class schedule! 

I am introducing bread classes in July! Homemade breads are healthy and good, and I receive happy voices from my students that they are often making bread at home after learning in my class. For soft buns, I have 2 classes such as Japanese Snow White Bread, Bagel and Donuts. And for the new class, I am teaching hard type of bread – Cranberry cream cheese bread & Petit baguette. I hope these breads will give you joy in your daily baking^^.

I will also be conducting our new Coffee & Macaron Master Course. So for those who have been waiting for macaron class, please find the details at the bottom.

<Coffee & Macaron Master Course>


Coffee & Macaron Course is an intensive 2-day course designed for students that are interested in mastering  the art of making macarons and coffee brewing (focusing on hand-dripping). For more details of this course kindly refer to my blog post; Coffee Making and Macaron Master Course!



As for the date and fee;

DAY 1:   July 31st (Sunday) 10:30am-5:00pm

DAY 2:  August 7th (Sunday) 10:30am-5:00pm

*It’s a full day course with 30 minutes lunch break. We will make various types of macarons (more than 12 kinds) over these 2 days. Each session will start with macaron making and you will learn about coffee in the 2nd half of the day tasting delicious macarons and coffee. It’s a fun class and I am looking forward to having good time with you!

Tart au Tiramisu * October Premier Class

This is Tart au Tiramisu from October Premier Class! I combined my favorite two items – Chocolate tarte and tiramisu! What a cake^^*.

The tart consist of; pate a sucre chocolat (chocolate tart), appareil au chocolat (chocolate filling), biscuit au chocolat (chocolate cake), and tiramisu.

We will use two kinds of dark chocolate in this tart; one from Madagascar (66% cocoa) and the other from Ghana (60%). There is a hint of orange flavor in chocolate filling and the biscuit chocolat is soaked with coffee syrup! Each of you will get to bring back 6pcs of this petit gateax.

Another menu for the class is chocolat orange finacier. Finacier is a French style buttercake, and we will bake it in chocolate flavor with a hint of orange. Yes, orange and chocolate is a good match!

Theme: pate sucre (tarte), finacier buttercake, chocolate pairing with orange.

<Intermediate Children Baking>

Tiramisu* – March Premier Class

We just finished our first March Premier Class yesterday. The menu was Tiramisu and Swirl Sable.

The highlights for this lesson is to make an Italian Meringue and Genoise (a sponge cake). We will be combining those parts – Genoise, Mascarpone Mousse & Italian Meringue and coffee syrup together. Each parts makes a difference in overall Tiramisu taste… and look?

But even if your first one doesn’t turn out perfect, it’s ok. Learning is improving!

For genoise, I’ll be teaching the tips to make a fine and smooth texture. This cake can be used for decoration cake, birthday cake and any kinds of cake, so just this part might be interesting for you to learn.

Another menu is this Swirl Sable. You only need 10min. to make this cookies!

Tiramisu and our Shop status*

I have been staying up till very late these days… One of the reasons is that I have to wait until Hanae goes to sleep then only start my baking sessions. My daytime has been rather eventful and I also have to bake many things at night, so sometimes my mind gets cloudy by thinking how much work I need to do; But even so, as soon as I stand in the kitchen I feel energetic and exciting. Then I realize how much I liked to bake!

This is Tiramisu that I made. Using full box of Mascarpone, creamcheese and good quality coffee, it tasted sooo good. Mascarpone is a very expensive cheese (especially in Malaysia because of the conversions of imported goods. sigh…), so you can’t really get this taste in a shop. I kept being disappointed by the taste of Tiramisu here despite of its popularity, but now I understand. If they put so much Mascarpone in, they perhaps have to sell one slice of cake with RM25 or so. haha… It’s just not realistic.

But baking at home by yourself is different! And that’s why I decided to open a baking school instead of a cafe (or a step to open one? hehe). I want to share this delightful experience with you all! Tiramisu will be on my menu early next year so please look forward to it as well.

Speaking of that, I was invited to some fondant decorating class yesterday. It was an exciting experience for me and I would like to write about it soon.

Lastly, just to give you a glance at my shop-.

We finally started renovating the shop last week and some of the cabinets and works are done. Although we are not opening a cafe and we tried to stick to a simple set, there still are so much work to do. Wall, partition, signboard, wiring works, err… many unexpected things and costs. But this is all for ourselves so we are able to take the fun pressure. We are also excited to see many things coming together after months of preparation and thoughts. It’s totally worth it!
