Raya Special Macaron Class*

Hi there! Ramadan month is starting. It’s been hot lately… I hope you take good care of yourself and have a good month ahead!

By the way, I will be conducting Raya Special Macaron Class in June. This is Caramel Factory’s signature macarons, using Italian meringue method. We will be making 4 kinds of popular flavours in the class; Japanese Green Tea, Raspberry, Chooclate and Vanilla macarons.

The class will be held hands-on and I will be teaching how to make macarons in details. Macaron making can be quite tricky but if you practice a few times, I guarantee you can make nice macarons successfully even at home!

You can bring these macarons to your seasonal gatherings!

Entremet de Noel & Lemon shortbread*

2016 Christmas Lesson #2 is Entremet de Noel, a framboise (raspberry) layer cake with vanilla mousse inside. We will bake pistachio dacquoise and pistachio pain de gene (cake) as a layer around the mousse.

It’s a lovely cake to celebrate your special day with your family and friends. Hope this cake brightens up your table^^.

Together we will bake Lemon Shortbread, a British style cookie with lemon zest. Since it’s a shortbread, I am thinking of coating this cookies with colourful sprinkles^^.

Cream puff and Eclair class available on Groupon!

Hi there! Thanks for visiting Caramel Factory blog! We are a baking school located in Shah Alam (please find our location details here). Today we have an exciting news for you, especially for the new customers!

We will be conducting classes under Groupon Malaysia next month! The deal has just launched on their website today. As you can find the details there, during 4 hour hands-on classes, you get to learn three items; Japanese cream puff, Belgium Chocolate Eclair and French vanilla cookie called Vanilla Viennois for RM99.00 (RM94.50 for 2 persons)!

I’ll explain you the details of each item later, but to begin with… All our classes are hands-on workshop style and you get to learn everything from the scratch. We prepare all the tools and ingredients (we use fresh and high quality ingredients), and the recipes are provided as well. So all you need to bring is yourself and apron and pen!

At the end of the class we have tasting sessions with the cakes and a cup of tea I’ve prepared. For all the cakes you’ve made in the class, you can bring back home for your family and friends^^.

Here are the details of the items we will be making.

1. Japanese Cream Puffs

Learn how to make Japanese style cream puff. We will bake them in mini size with delicious custard cream inside. On top of the choux there will be crunchy biscuit, which makes this cream puff special.

2. Belgium Chocolate Eclair

Eclair, a French style choux, is the origin of Japanese cream puff. Using similar method as cream puff, we will further master our cream puff making. We bake long eclairs, fill them with Belgium chocolate custard cream, and finally coat them with chocolate.

3. Vanilla Viennois

Vanilla Viennois is a French style butter cookie. Using high quality French Vanilla paste, this cookie has nice vanilla flavor and texture that melts in your mouth. It’s easy to bake so you get to bake in many coming occasions!

Macarons and Cheesecake for sale!

Hi everyone! It’s been 7 months since Caramel Factory has been in operation and I must say that it has been a very enjoyable (and also busy) 7 months!  We have had a lot of requests for macarons and other cakes during this period, and although we could not fulfill them all, we are trying very hard to sell more pastries in the shop.

So I’m happy to announce that during this Ramadan month (July 25th – August 18th) we are going to sell macarons at the shop!

We have two types of packages:

1. Regular size for 3pcs – RM8.00

2. Mini size for 5 pcs – RM10.00

This week the flavors we are offering are; milk chocolate, dark chocolate and vanilla.

Drop by if you want to get them! If you want to order a larger quantity for an event or even yourself please just tell us:)

We will also be taking orders for Japanese Souffle Cheesecake, a moist silky type of cheesecake! It’s RM60 for 7″ round. We need 3 days in advance for the order. If you are interested in, please contact me at 012-352-3106 (Tomoko).

Basic Class * Japanese Cream Puff!

Another Basic Class Menu for June is Japanese Cream Puff and Vanilla Viennois!

This time we will bake what is called a Cookie Choux in Japan, which is a cream puff with crunchy biscuits on top! It is different from the cream puffs we baked in Hinamatsuri Special Class. The custard cream inside is also different too, and this is denser type of cream. We will bake those cream puffs in a small size and each of you will bring back about 18 pieces of them!

I’ll teach you the tips of making the cream puffs in round and nice shape!

The second item for this class is Vanilla Viennois, which is a light and crunchy cookie rich in vanilla flavor. To answer to some of my students, this is also quite different from Diamant Vanille or Vanilla Swirl cookies that I taught in the past. All my recipes are different for each classes ^^.

We will practice piping this cookie in a wavy shape. This cookie will be good for the coming Hari Raya Gifts to your family and friends!

The theme for this class is; Cream Puff, Cookie and Piping

I had a busy and interesting last week.

On Friday, I conducted a class at Cake Connection in Jaya One. It was such a pleasure for me to conduct a class in this lovely space, and I enjoyed teaching 6 kinds of Japanese and French pastries there. My seven students were all great and we got to share some experience while working our hands on the cakes.

I am conducting another class at Cake Connection on June 30th (Sat.), so please look forward to it!

On Saturday we had Bread Course Session 1 and Session 2. My bread making classes are all taught by using hands, and especially for Session 1 Sausage and Ham & Cheese Rolls we throw the dough on the kitchen top many times. I always get ‘laughs’ during this process. It’s time for the students to release their daily stresses, too^^!

It’s interesting to see how students shape their doughs – some are perfectionists and some are creative!

We have the same bread sessions this coming Friday and in July.

After rushing back from the kindergarten sports day event on Sunday morning, I conducted Intermediate Children Baking! This month menu was Vanilla & Chocolate Marble Pound Cake. As always children enjoyed baking dirtying their hands and mouths^^.

I only had 3 students for this class, so it was quite relaxing and we were chatting while baking. Yes, all my classes are with small group of people so it’s quite intimate^^. Another premier class to be held next Wednesday – May 30th!

Special Macaron Workshop – Feb.11th!

This weekend we are also having a Special Macaron Class!

You will learn two kinds of macarons; Belgium Chocolate & Vanilla Rose during the 3 and a half hour course. Both flavors are very well received by the customers that have tasted my macarons, so please look forward to the class, students!

For Belgium Chocolate Macaron, the filling is chocolate ganache and for Vanilla Rose, the filling is vanilla flavored buttercream. Not only the difficult macaron crust, you get to learn the tips of making the fillings.

Feb.11th(Sat.) class is already full but we plan to have another class in March. So if you couldn’t join this time, please look out for the next class!

マカロン2種: ベルギーショコラのマカロン と バニラローズ風味のマカロン (お一人様6個x2種=12個お持ち帰り)

2 種類のマカロンの作り方を丁寧にご指導致します。 ショコラのマカロンは、ベルギー産カレボー社のカカオとチョコレートを使用。 バニラローズのマカロン は、パータボンプベースのバタークリームの作り方で学びます。 マカロンはお菓子の中でも難しい一品ですが、ポイントポイントを抑えることで、マスターす ることができます!
