Opera Maccha*

This is Opera Maccha from June Premier Class!

It’s a layer cake with green tea butter cream and chocolate ganache with a hint of green tea and lemon. Traditional Opera uses a lot of butter cream, but I realized that Malaysians found it a bit heavy (Opera here is more like a chocolate layer sponge cake), so I reduced the amount of butter and increased the sponge layer to made it lighter than the original one.

It has many layers (from the bottom): Coating chocolate, a few layers of biscuit maccha (green tea sponge cake), green tea butter cream, chocolat ganache with a hint of lemon, and glacage coating.

Another menu for this class is Green Tea Snowball Cookie. It’s a light and melty cookie!

Entremet Chocolat Orange*

One of our June premier class is Entremet Chocolat Orange and Cream Cheese Cookie!

Entremet Chocolat Orange is a chocolate mousse layer cake consists of 6 layers (from the bottom):  Sable Chocolat with a hint of French salt fleur de sel, Chocolat Mousse using Cacao Barry 58% chocolate Mi-Amere, Biscuit Joconde with a hint of orange flavor, Orange CremeuxChocolat Mousse and Glacage Noir (chocolate coating) to cover all the cake.

We use high quality ingredients from France (salt) and Belgium (chocolate).

We will make this in 6″ round mold size. Coating glacage chocolat is a little tricky, but hope everyone’s cake turns out to be shiny and beautiful!!!

Another recipe for this class will be Cream Cheese Cookie. It’s a unique cookie and tastes a bit like  cheesecake? Please find them out in the class^^.

Haikara Style Cafe @ Subang

Today was a Wesak Holiday, so I decided to have a nice lunch with my family at Haikara Style Cafe in Subang! I’ve heard about this cafe many times but never had a chance to go there, so today was a perfect day to visit!

It was a very cozy cafe with many Japanese retro style items around (Haikara means something like retro, nostalgic, etc.) and even the menu was really like what we could expect in Japanese traditional cafe. I actually didn’t know that the owner was Japanese, but as I was looking at their menu and also tasted their coffee and food, I confirmed this shop must be run by Japanese owners. (For instance, red color daruma doll on the right top of the cabinet is our historical doll to wish for yearly success and fortune. We color one of the eye into black at the beginning of the year, and we color the other eye when the year ends without any trouble. This kind of culture cannot be easily transferred if you are not Japanese!)

Anyway, we got to meet the owner lady at the end of our stay and found out that the cafe was run by Japanese couple and it’s 6 years old.

This is Nanban chicken salad I ordered. My husband ordered Beef stew. They were both delicious!

We also ordered their specialty syphon coffee with Tanzania beans. It was really rich in aroma!

I saw many people, friends and family enjoying their holiday afternoon. The cafe was personal and I really liked it. I wish to visit there again!!!

Kyoto Green Tea Chiffon Cake*

Our new menu for June Basic Class will be Kyoto Green Tea Chiffon Cake & Rich Scone!

This vivid green color comes from the maccha green tea powder from Japan^^. (Will let you know where you can get them at the end of post.) I tried out various brand from other countries which is supposed to be a high-end product but Japanese maccha powder is by far the best… green tea comes from Japan, after all. So when you purchase green tea powder, make sure to check the origin of country ya!

We will spread white chocolate chip that goes well with green tea flavor.

As chiffon cake is normally eaten with fresh cream, we will also make red bean cream and stuff it in the middle hole. We will use red bean also from Japan, Hokkaido.

Another menu for this class will be Rich Scone. Why Rich scone? — Because we use a lot of cream in this recipe.

I just introduced Scones in Afternoon Tea Special Class, but since I received many requests on another type of scone, I decided to teach again next month. I didn’t know scone was so popular!

Hi there! Thank you for waiting for the June schedule! For June, our theme would be green teachocolate and citrus fruits! We will be using fruits such as orange and lemon and create a nice harmony with chocolate including white chocolate. I also prepared popular items for the second menu such as scones and cookies! These are nice and easy to make^^.

Back to Malaysia!

We are back home~!

Since I am back to Malaysia last weekend, I have been trying to adjust with this heat again. I thought it was because my body got used to the Japan Spring weather, but people say it’s been hot for the last few days. During our 2-weeks-stay there, Japan was very sunny and breezy (about 10-20 degree C) and it only rained once at night. Some days were cold and we needed a jacket but it was overall an ideal weather!

I didn’t really go out much because of my big tummy and spent most of my days exploring around my house. I honestly wanted to visit some cafes and shops, but we needed to take trains to get around the city so it was too much of a hassle for me… Instead, I spent my time with my family and my daughter. This is one of the days I took her to a walk near my house.

She liked taking a walk and pick up some flowers and stones. We also went to a park to catch some fish! It was a pay pond but the fish there were from the mountain and were really fresh, so we cooked them for dinner!

This is my daughter and my niece in the park. They are the same age and played together. I also met my sister’s newborn baby (nephew)!
