Saint Honore Caramel*

February and March Premier class menu is Saint Honore!

Saint Honore is one of the traditional French choux pastries. Did you know that the cream puff that you are familiar with is actually created in Japan and they almost do not exist in France? Instead, the puff pastries you see in France are mainly this Saint Honore, Paris Brest, and Eclair.


Saint Honore normally consists with pie crust (or pate a sable), 3 mini choux and cream.

Our Saint Honore will be; pate foncer (salty pie crust), mini choux with caramel patissiere and caramel cream. The brown color part is caramel.

Saint Honore has various flavors and I also tried a few in the past.

I was quite fascinated by its beautiful shape and have always wanted to create a recipe. I tried out many flavors such as chocolate , rose, and caramel and liked caramel the best. So I’m going to teach it to you in the class!


This class is also good to learn and practice making cream puffs!

Hi! Today I would like to update the class schedules for October. Continuing from last month, we have autumn cakes and cookies and this month we would also like to focus on some chocolate pastries! We also have Halloween Special Class, a 5-hour-course with 3 menus and we will be making various pumpkin sweets! I’ll be introducing popular mille crepes in this class too! So here are the schedules^^.

Last week~***

I had a busy and interesting last week.

On Friday, I conducted a class at Cake Connection in Jaya One. It was such a pleasure for me to conduct a class in this lovely space, and I enjoyed teaching 6 kinds of Japanese and French pastries there. My seven students were all great and we got to share some experience while working our hands on the cakes.

I am conducting another class at Cake Connection on June 30th (Sat.), so please look forward to it!

On Saturday we had Bread Course Session 1 and Session 2. My bread making classes are all taught by using hands, and especially for Session 1 Sausage and Ham & Cheese Rolls we throw the dough on the kitchen top many times. I always get ‘laughs’ during this process. It’s time for the students to release their daily stresses, too^^!

It’s interesting to see how students shape their doughs – some are perfectionists and some are creative!

We have the same bread sessions this coming Friday and in July.

After rushing back from the kindergarten sports day event on Sunday morning, I conducted Intermediate Children Baking! This month menu was Vanilla & Chocolate Marble Pound Cake. As always children enjoyed baking dirtying their hands and mouths^^.

April Intermediate Children Class!

Last weekend we also had Intermediate Children Baking Class! We have classes every month for children age 8yrs to 14yrs, since there are many children this age group keen in learning baking^^!

This month menu was Carrot Cake with Cream Cheese Frosting!

They used hand-mixer, piping bag and Kitchen Aid mixer too!

Good job children!

Intermediate children baking for May is scheduled on May 20th (Sun.) 10:30am-1:30pm. Menu is Vnilla & Chocolate Marble Cake! I’ll be writing a post shortly.
