January Class is Finished!

Yesterday was the last class for the month of January!

I had Japanese Souffle Cheesecake class in the morning and Caramel Pound Cake class in the afternoon. This photo is with my students in the afternoon class. I had the first “man” (not a boy) in my class^^!

He made a scone with elephant shape. What a surprise!

Everyone’s caramel pound cake looks so good!

Caramel Pound Cake class is over for now (although I intend to have other types of caramel pound cake class in the future since it tastes sooo delicious), but we have repeat class for Japanese Souffle Cheesecake (Basic A) and Gateau Fromague (Advanced) in February.

So for those of you who missed the January class, please check it out! Gateau Fromague class is on this weekend 5th Feb (Sun.)!

Happy Chinese New Year!

(Bye bye Rabbit. Welcome Dragon!)

I hope you all had a great CNY holiday!

As for me, I went back to my husband’s hometown in Ipoh for a couple of days and visited our relatives, met up with some of our friends in KL, and saw my Japanese friend and her family who were traveling to Malaysia! It was quite a hectic holiday for us and three of us fell sick… but it was a good beginning of the year.

Right before Chinese New Year, we conducted Children Baking Class!

This time the children batch was slightly younger. We had couple of 4 year old kids, and few mommies stayed around during the class. We made Cartoon Chocolate Cookies in Day 1 and Angry Bird Buns in Day 2!

Just as I expected, children loved smashing the cookie & bread dough.

This girl-team’s bread dough fluffed up very nicely. Well done!

These three girls on the right had a great teamwork! They are schoolmates.

And this cute little girl on the left is just 4 years old.

The fillings are white bean and homemade pumpkin paste!

The eyebrows are made with black (charcoal) icing sugar.

After all the ‘touch’ and the ‘punch’ and the decoration, some of the Angry bird buns became a bit too hard to eat…^^; but as long as children enjoyed baking, it’s alright right!?

I hope that the children get to bake with their parents again at home!

Here I’d like to post our Class Schedules for February! In February, we are offereing many more interesting classes!!!

One of my favorite cakes; Rollcake and Tartes are on the menu. Since Valentine’s Day is coming soon, we have Valentine Day’s Special (Seasonal Special Class) and other classes using chocolate. The chocolate we use are from Belgium, Switzerland and Germany. Hmm… yummy…

Due to many request, we also have a Macaron Class this month. So for those of you who specially want to learn macaron, don’t miss it! We also have a requested repeat class for January Basic A (Souffle Cheesecake) and Advanced (N.Y. Style Cheesecake).

Children Baking Class & Adult Advanced Class Menu*

January Children Baking Class is coming soon this weekend! Oh, it’s Chinese New Year! We are supposed to celebrate our New Year Eve with our family!

But don’t worry, the class will be held in the morning till early afternoon, so for those who go back to their hometown only on the 23rd (Mon.), which is the first day of CNY, can still join our class! Anyone who is between 4yrs to 12yrs old can attend this class^^. Here are the course details;

<Children Baking Class (2 day course)>

DATE:  January 21st (Sat.) 10am – 1:15pm &  January 22nd (Sun.) 10am-1:15pm

MENU:  Day 1 – Cartoon Chocolate Cookies

                 Day 2 – Angry Bird Pumpkin & White bean Buns

FEE:      RM180  RM150/course

<Advanced Class Menu>

We also have Advanced class for the adult this coming Saturday. The menu for this class is; Gateau Fromague & Earl Grey Tea Sable. The menu looks similar to Basic A class, but both the cheesecake and sable use totally different methods to make.

Gateau Fromague is a dense cheesecake with rich and creamy texture. We willalso learn how to bake genoise (a sponge cake) and put them at the bottom.

Another menu is Earl Grey Tea Sable. This is a fragile cookie and the moment you bite onto it, it melts in your mouth!

Caramel Factory’s Official First Adult Class was held on Jan.15th!

Caramel Factory’s official first adult class was held on Jan.15th (Sun.)!

We had Japanese Souffle Cheesecake class in the morning, and Caramel Pound Cake (Quatre-quart au Caramel) class in the afternoon.

Here are some of the photos that we took during the class.

1) Souffle Cheesecake & Diamant Vanille: 10am-1:30pm

Our class is fully hands-on workshop style. So each students get to bake their own delicious cakes!

During the class, you will learn the technique and tips to bake step by step. Especially for the basic class, I try to teach them how to mix the batter, to handle the dough and the reasons behind each process. There are many important hidden steps even for a simple cake!  (Although this souffle cheesecake was rather a complex one…)

The next day, I received delight comments from the students that their family loved their cheesecakes, and are going to get the ingredients to bake it at home! Yes, it is important to review and practice right after the class! You need to practice over and over to get the perfect one. Students, keep it up^^!

January – Basic B Class Menu

When you are asked to choose A or B, which one would you choose? Perhaps people will instinctively choose A. But here is the Menu B!

The menu for January Basic B Class is; Quatre-quart Caramel & Japanese Pudding.

Quatre-quart, meaning one-quarter in French, is a pound cake. This is a basic yet very important cake that can be applied to other kinds of pound cake, muffins, and cupcakes! We will learn this cake in a sugar-batter method, and will put the melting caramel inside.

Another menu is Japanese pudding. I don’t have a picture right now, but this is a smooth and vanilla rich pudding with bittersweet caramel at the bottom.

As you can see, the theme of this class is Caramel. So for those who like caramel, this class should be an attractive one^^.

Caramel Factory as of today!

Today I received a delight surprise from my friends who now live in China! Thanks a lot WT & YZ!!!

I love live flowers. Hope they last long…

The flowers were taller than me^^

The traffic in my area is not so big, but every day I’m meeting new interesting people. It’s very exciting talking to them…

We are selling cupcakes at the shop. The flavor in the photos are; vanilla, oreo and chocolate cupcakes. Simple choice for now but we will increase the varieties of cupcakes and other pastries in future.

Nambu Tekki Pots & Other Cute Items from Japan!

These beautiful French Style iron pots came all the way from Japan! They were brought over by my family who visited us during the New Year holidays. I specially ordered them for my classes.

They are called Nambu Tekki (南部鉄器) and are made in the northern part of Japan, Morioka, at Iwate Prefecture. This area was affected quite badly during the 2011 earthquake and at that time the production and delivery was suspended for a while…  So it felt very meaningful to have this at my shop in Malaysia…

Apart from this, here are some of the items I requested my parents and sisters to bring from Japan ^^.

The flower lease was much more fragile than I thought, so I’m still deciding where to put them. The shop still looks empty-ish so I want to furnish them one by one.

Back to the pots, I’ll be serving tea in this pot at the end of each class; during the tasting time. Cannot wait for the moment!?

January – Basic A Class Menu

Hi there! Thanks for visiting my blog.

I’d like to explain more about the cakes you’ll learn in my January classes^^. (Please refer to my previous post for all the classes in January)

First, for January BASIC A Class, the menu is Japanese Souffle Cheesecake & Diamant Vanille.

Japanese Souffle Cheesecake is a soft and fluffy type of classical cheesecake. Honestly speaking, I didn’t know that this type of cheesecake was originally from Japan until I came to Malaysia. Every time I see “Japanese Cheesecake” at the shops, I was wondering Why Japanese? Since this type of cheesecake is quite common in Japan, I thought that they exist all over the world. But then I found out that Japanese invented this cake because we tend to like less heavier & less sweet type of cakes!

You might have tried Souffle Cheesecake / Japanese Cheesecake in some of the shops in KL, but trust me, Caramel Factory version is the best! hehe… As you bite into the cake, you can feel its soft and delicate texture!

Diamant Vanille, meaning diamond in English, is a traditional French iced box sable/cookies. The name came from its look, coated with sparkling sugar. It’s simple to bake yet so delicious! We will use Madagascar vanilla beans and oh, this cookie uses no egg! So it’s friendly for people with egg allergy. Also, this cookie will remain crunchy even after few days.

It will for sure be a perfect item for the coming Chinese New Year gifts!
