August 2013 Class Schedule*

Hi there!

I am posting August 2013 schedule here. Since my tummy is getting bigger and it’s getting quite hard for me to move around^^;, my classes for next month will be limited and I will focus on the requested classes. So sorry for my students who already took all the classes!!! I will be taking a break for a few months after my baby’s born, so I hope to see you all once I am back!

Tart au Citron @ L’oiseau de Lyon*Tokyo

We are making tart au citron (lemon tart) this month!

This picture is one of the best tart au citron I’ve ever had – in a patisserie called L’oiseau de Lyon in Yushima, Tokyo. There are many ways to decorate this cake with Italian meringue, and this is one of the sample using Saint Honore piping nozzle. I had this cake a couple of years ago so didn’t remember, but now that I look at it there was lemon macaron^^. How cute!

Caramel Dacquoise* Mango Mousse

I just had a class for Caramel Dacquoise today! This is one of my favorite recipes, to make and to eat! Most of my students are not familiar with this cake, so it is also exciting for me to introduce this cake to them. Today we had one Japanese lady and it was her first time too^^.

The caramel butter cream we put inside is slightly tedious to make (At least I used to think so) but now that we have done making anglaise sauce so many times, I think many of my students will find it easier to make. So for those students who have learnt this cake long time ago (last year), please dig out the recipe and try it out again!!!

mango mousse

The mango mousse I teach as a second menu is also my favorite recipe! This is exactly the same recipe as Japanese jewerly shop Mikimoto Lounge, Peninsula Hotel and Park Hyatt Hotel in Tokyo. The texture of this mango mousse is very creamy and almost watery, but it’s supposed to be that way to melt in your mouth. If you find it too watery, you just increase the gelatine amount to what you like^^!

I didn’t try any of these today but I suppose I make some more for myself in the next class, hehe!

Maccha rollcake*

I had Maccha Rollcake for my tea time today!

I combined lemon cream together with whipping cream to make the cake tastes fresh and lighter. It almost tastes like cream cheese. Yes, maccha goes well with citron as I also used the combination for Opera Maccha cake. Whipping cream can be combined with other creams such as sour cream, custard cream, and lemon cream to give variety in rollcake flavor. You can also change the rollcake to chocolate flavor using cocoa powder, and put some orange scent in the cream as chocolate and orange goes well.

Rollcake is simple yet nice and fun to experiment! And of course, it tastes delicious!

Tart au Citron*

Our premier class for July is Tart au Citron (Lemon tart) ! 

It’s a very fresh tart with lemon cream inside. We will make pate a sable, creme d’amande, lemon butter cream and decorate with italian meringue. 

Most of the lemon tart you see in a shop only has tart crust, lemon cream and italian meringue but I like to put a thin layer of creme d’amande to add some nice flavor and to soften the sour taste.


Italian meringue in lemon tart is also an important part, as it will help soften the sour lemon cream taste. It also makes the tart look more attractive and delicious^^! You get to bring back 6pcs of those in 10cm mini tart size.


Another menu for this class is creme burlee. This is a simple and delicious recipe, and I believe it will appeal to everyone. We will bake them in a aluminum cup for 4pcs each.

White Gateau Chocolat* Brownie Tart*

What does this cake look like?

It’s a White Gateau Chocolat Cake! As per literal meaning, this is a gateau chocolat using white chocolate. It’s a very unique cake so if you don’t know you might think it’s a cheesecake or something. It’s lighter and easier to eat than the gateau chocolat cake. We will put some apricot inside.


Another menu for this class is Brownie Tart. Normally my class has main item and smaller item, but for this class both will be the main item!


Tart and brownie – This combination is also rare but surprisingly it matches well! I like tart very much so the crunchy tart makes me don’t want to stop eating this brownie^^… the other day I had 3 slices in one go. oops! Of course you can bake brownie without this tart crust.

Japanese Maccha Rollcake*

It’s July!

This is Japanese Maccha Rollcake from July Basic class. The rollcake is a “souffle” type of rollcake (similar to Rollcake au Fruits some of you might have learned before) and the texture is slightly chewy and moist than the normal swiss roll you find.


The inside cream has a little bit of lemon flavor together with maccha ganache. Yes, continuing from last month we have green tea and lemon as a theme^^.


Another menu for this class is Chocolate Maccha Muffins, which has two layers of chocolate and green tea flavor cake. We will bake in 2 1/2oz size muffin molds (5pcs).
