Afternoon tea @ Cameron Highlands Resort

During our trip to Cameron Highlands, we stayed in Cameron Highlands Resort, one of the YTL’s resorts. The hotel room was nice, the service was great, and the breakfast and tea at Jim Thompson’s tearoom was excellent!

I enjoyed afternoon tea with my parents while my husband took care of the kids^^ (thank you…). One great thing about this hotel is that they had kid’s room, where kids could enjoy small slides and blocks whenever they want to.

So this is the three-tier afternoon tea set, RM80++ for 2pax (including 2 choices of BOH Tea).

There were scones, a few kinds of sandwiches, madeleine, red velvet cake, eclair, cheesecake, strawberry tart, lavender macaron and strawberries. The quality was high and I especially liked their scones and eclair!

And this was the breakfast I had. It was not a buffet type and you select from the menu and that made everything fresh and nice. I, of course, chose their pancakes and waffles over savory dish like omlette. I loved the waffle so much that I ordered it again next morning.

After I came back home, I baked some scones and enjoyed them over a cup of BOH Tea and Cameron Highland Strawberry jam!

Mango Rare Cheesecake*

Hi there!

So this is the photo of Mango Cheesecake! As some of you may have noticed, I made change on the topping mango cream part from the previous photo and made it creamier. From bottom; Digestive cookie crust, hazelnuts crumble, rare cheesecake, and mango passion cream!

Oh yes, we have a surprise in this cake! This one, the one that everyone thinks it’s a banana is actually hazelnuts crumble! It’s not as crunchy as the crumble you put on top of the muffins (because of the size and baking time), but goes very well with the cake.

Mango and passion goes very well too and adds freshness to this cake! In the class we will put in fresh mango as well.

Hi there!

I am re-posting my June 2014 Class schedule as some of you might be wondering (I posted it together with our May 2014 class schedule). We only have a few classes next month and most of the classes are already full (sorry><!) except Tart au Mango on June 12th (Thursday). I will be travelling back to Japan from 16th June to 30th June, so I will see you in July again!

By the way, the fasting month will be starting end of June to July. I will be conducting classes during the fasting month as usual, but there might be some change in class time. I will post July schedule in middle of June, but just so you know, I will list down some of the classes I will be repeating at the bottom of this blog. Thanks and I will see you soon!

Scones***

I have been making various scones for the last few weeks! Scone is perhaps the easiest and quickest to prepare and nice to have for a tea break^^*. I also have them for breakfast sometimes. All you need to do is to put couple of ingredients in the blender and blend them for a few seconds, rest in the fridge for a while and bake them for about 15 minutes!

Here are couple of scones I baked.

My favorite scone is plain scone and earl grey tea scone. Earl grey tea scone is very nice to eat on its own and the more you bite on it the more bergamot fragrant comes out. hmmm…

My house has many types of confiture (jam) for macarons, and I had raspberry, mango, blueberry, apple comport and even caramel sauce! So I tried out many combination and “Earl grey tea scone x blueberry jam” was a very nice match!

For chocolate chip scone, caramel sauce matches very well. Since cocoa powder makes the scone slightly dried, caramel sauce covers the dryness and adds nice flavor to it.

Kyoto Green Tea Chiffon Cake*

Our new menu for June Basic Class will be Kyoto Green Tea Chiffon Cake & Rich Scone!

This vivid green color comes from the maccha green tea powder from Japan^^. (Will let you know where you can get them at the end of post.) I tried out various brand from other countries which is supposed to be a high-end product but Japanese maccha powder is by far the best… green tea comes from Japan, after all. So when you purchase green tea powder, make sure to check the origin of country ya!

We will spread white chocolate chip that goes well with green tea flavor.

As chiffon cake is normally eaten with fresh cream, we will also make red bean cream and stuff it in the middle hole. We will use red bean also from Japan, Hokkaido.

Another menu for this class will be Rich Scone. Why Rich scone? — Because we use a lot of cream in this recipe.

I just introduced Scones in Afternoon Tea Special Class, but since I received many requests on another type of scone, I decided to teach again next month. I didn’t know scone was so popular!

Afternoon Tea Special Class*

I would like to introduce you on Afternoon tea Special class!

This class will be great for those of you who…

1) wants to learn various recipes in one class!

2) wants to learn quick-preparation pastries!

3) wants to have Afternoon tea party with your friends at home!

and

4) who likes to enjoy sweets over cup of teas ^^!

We will make 5 types of pastries and a sandwich that are popular for the Afternoon Tea Sets. First comes scone, then N.Y. style cheesecake, then Japanese rollcake and cookie. I also added nutty brownies as a fifth menu because normally there will be something with chocolate!

Here are each of the details (you get to bring back 4 packs of each item):

 1. Scone Raisin ~ Mariage Freres Style~ (4 pcs)

If you like tea, you must know this tea company called Mariage Freres in Paris! They are the pioneer of tea company and carries hundreds of teas including original teas and blend teas. They have tea salon in Paris and in Ginza, Tokyo Japan.

I’ve visited salon in Japan a couple of times and shops in Paris. The food you can taste there is unique and each dish has a hint of some kind of teas, even the meat.

The scone recipe is from their salon menu!

2. N.Y. Style Cheesecake ~with blueberry sauce~ (11cm x 1pc)

This N.Y. style cheesecake uses 3 types of cheese. N.Y. style cheesecake is normally very easy to make (just mixing all the ingredients), so I added some unique flavor/cheese to it! We will also make the topping creme fromage and the bottom crust!

3. Whole Wheat Cookie ~make your own DIGESTIVE cookie~ (4-6pcs)

Yes, we will make our own whole wheat cookies and use them for cheesecake crust too. This cookie taste just like digestive cookie to me. It’s simple, crunchy and delicious! 

4. Japanese Rollcake ~non souffle type~

I put there”non souffle type” just in case you wonder whether the recipe is same as Rollcake au Frits (Japanese rollcake) I teach in other class. No it’s not!

This is a new recipe and I learnt this before from one of my favorite yakigashi pastry shop in Japan called Maison Romi Unie. The cream is special and not only fresh cream!

5. Nutty Brownies (4pcs)

This moist nutty brownie is also easy to make. Not only adults but also kids will for sure love this cake!

We will also prepare tuna sandwich, and have them all together at the end of the class with 2 types of English tea!

I’m having a relaxing New Year Holiday!

Every morning I have these scones that I made for my daughter’s birthday party. Scones can be kept for a while so I made some extras^^! I had them with the jams, raspberry and salty caramel, that I brought back from Japan during our last trip.

April classes are finished!

We just finished all our classes in April! I’d like to thank you all for joining our classes again this month!

The last lesson was Afternoon Tea Special Class. This is a very interesting class which you can learn 5 kinds of sweets and sandwich in one session!

For this lesson, I focused on quick & easy & delicious sweets so that you can for sure bake them at home for your family and friends! So even though we made more items than the regular classes, I felt that we used less tools and dish! You know, washing tools and plates are another work when baking…;


I hope that students enjoyed the class and were excited to practice at home after the class^^!

 

And yes, I opened the Ceylon Silver Tips tea I was talking about the other day. The tea leaves were beautifully shining in silver color, and the color, fregnant and the taste was excellent! I forgot to take the photos but would definitely like to write about it the next time I have them.

Afternoon Tea Lesson*

Every once in a while I conduct Season Special Class! These are the special classes that you get to enjoy Japanese four seasons and other cultural events! In February we had Valentine Day’s Special and in March we had Hinamatsuri Japanese Children Day Special!

And for the month of April and May, it will be Afternoon Tea Special Lesson!

Here are the 6 items you will learn during this 5 hour course!

1. Scone

2. Sable Cookie

3. N.Y. Style Cheesecake

4. Gateau Chocolat (Chocolate Cake)

5. Panna Cotta (Blanc Manger)

6. Sandwich (Tuna & cucumber)

This time I focused on quick & practical menu, so that you can swiftly prepare them whenever you have guests coming to your house!

The photos are the image of this lesson, and we will be baking all the 6 items together. You get to bring back all the recipes and 2 persons portion of the afternoon tea sets!

During the tasting session at the end of the class, I’ll prepare Caramel Factory’s two popular flavor macarons and two types of teas.

January Class is Finished!

Yesterday was the last class for the month of January!

I had Japanese Souffle Cheesecake class in the morning and Caramel Pound Cake class in the afternoon. This photo is with my students in the afternoon class. I had the first “man” (not a boy) in my class^^!

He made a scone with elephant shape. What a surprise!

Everyone’s caramel pound cake looks so good!

Caramel Pound Cake class is over for now (although I intend to have other types of caramel pound cake class in the future since it tastes sooo delicious), but we have repeat class for Japanese Souffle Cheesecake (Basic A) and Gateau Fromague (Advanced) in February.

So for those of you who missed the January class, please check it out! Gateau Fromague class is on this weekend 5th Feb (Sun.)!
